Barbecued Beef Ribs With Spicy Sauce Recipe
- 1/4 c. vegetable oil
- 2 lrg onions finely minced
- 4 x garlic cloves
- 1 Tbsp. chili pwdr
- 1 Tbsp. grnd cumin
- 1/2 tsp cayenne
- 1 x lemon or possibly more
- 1 c. ketchup
- 1/4 c. brown sugar
- 2 Tbsp. worcestershire sauce
- 8 x beef ribs each about 7 inches long, about 10 ounces each
- Most supermarkets carry beef ribs.
- And do not reduce the oil in this recipe, as sauce made with less oil burns quickly on the barbecue.
- For sauce, heat oil in large saucepan over medium heat.
- Add in onions, garlic, chili pwdr, cumin and cayenne.
- Cook, stirring often, till onion has softened, about 5 min.
- Squeeze sufficient juice from lemons to measure 1/4 c.. Stir into onion mix, along with ketchup, brown sugar and Worcestershire.
- Bring to boil, stirring often.
- Reduce heat to low and simmer, covered, till thickened, about 15 to 20 min.
- Stir often, especially near end of cooking time.
- Use right away or possibly cover and chill up to 1 week.
- Oil grill and preheat barbecue.
- Place ribs bone-side-down on barbecue and grill, turning at least once, for 30 min.
- Spoon a third of sauce into serving dish and set aside to be used as dipping sauce.
- While ribs are on grill, brush with sauce.
- Continue turning and brushing with sauce, till richly glazed and browned, about 15 to 30 min, depending on thickness.
- When ribs are done, move to cooler part of grill.
- Serve with reserved sauce.
