Muffins with Cheese-Wrapped Potatoes Inside
- 1 large Potato
- 3 slice Easily meltable cheese
- 1/2 tsp Coarsely ground black pepper
- 50 grams Margarine
- 25 grams Sugar
- 1 Egg
- 120 grams White flour
- 1 tsp Baking powder
- 60 ml Milk
- 1 heaping tablespoon Mayonnaise
- 1 Parsley (for garnish)
- First, rinse the potato well with water, and microwave for 1 minute.
- Cut the potato into 6 wedges and set aside to cool.
- Lightly mix the sugar and margarine together in a bowl.
- Add the egg and mix again.
- Sift in the baking powder and flour, and mix briskly.
- Finally, add the milk, mayonnaise, and black pepper.
- Stir a final time to distribute the ingredients evenly.
- Cut each slice of cheese in half.
- Place a piece of potato on each half-slice.
- Wrap and roll the cheese around the potato.
- Repeat this until all 6 pieces are wrapped.
- Divide the mixture from Step 3 evenly into 6 muffin cups.
- Add 1 wrapped potato into each cup.
- Sprinkle each cup with parsley.
- Bake in a 180C oven for 30 minutes.
- The muffins should be done.

- The potato is fluffy and delicious.
