Mom's Marbled Cheesecake
- 1 12 cups vanilla wafer crumbs (45 wafers)
- 12 cup confectioners' sugar
- 13 cup margarine, melted
- 13 cup cocoa
- 14 cup cocoa
- 14 cup margarine, melted
- 4 (8 ounce) packages cream cheese, room temp
- 1 (14 ounce) can sweetened condensed milk
- 4 eggs
- 1 tablespoon vanilla
- 13 cup flour, unsifted
- Preheat oven to 300F.
- Prepare crust by adding all ingredients together and mixing lightly
- Press firmly on bottom of 9" springform pan (use the bottom of a measuring cup to help press flat).
- Mix together margarine and cocoa for marble, and set aside.
- In large mixing bowl, beat cream cheese until fluffy.
- Gradually beat in sweetened condensed milk, then eggs and vanilla.
- Slowly add flour.
- Measure 1 1/2 cups batter and place into bowl with marble mix.
- Beat together.
- Spoon 1/2 of vanilla batter onto crust, then 1/2 of chocolate batter.
- Repeat.
- With a knife, cut vertically through batters to create marbling.
- Bake 50-60 minutes, or until center is set, but slightly jiggly.
- Cool, then refrigerate over night, release from springform pan next day.
