Brining Turkey
- 2-1/2 gal. water
- 1 cup table salt
- 1 cup sugar
- 1 tsp. black pepper
- 1 (10 lb.) turkey (thawed, if frozen)
- Place water, salt, sugar and pepper in deep container, preferably plastic, large enough to hold the turkey and the brining liquid.
- (Be sure container will fit in refrigerator).
- Stir until salt and sugar are completely dissolved.
- Add turkey to container, submerging turkey completely.
- (Make more brining liquid, if necessary).
- Cover container with plastic wrap; refrigerate at least 10 hours or up to 24 hours.
- Remove turkey from brining liquid; rinse well with cold water.
- Pat dry with paper towels.
- Bake as directed on turkey package.
