Crock Pot Barbecued Beans

  1. Night before prepare the beans and soak overnight.
  2. Heat oil in skillet over medium heat until shimmering.
  3. Add the onions and 1/4 teaspoon salt and saute until opaque.
  4. Stir in garlic and continue cooking for another 15 seconds.
  5. Stir in 1 cup of barbecue sauce.
  6. Bring to a simmer; pour into the slow cooker.
  7. Drain the beans and add to the slow cooker.
  8. Add bacon and brown sugar and then the boiling water.
  9. Cover and cook on low for 9-10 hours, or high for 6-7 hours, until the beans are soft.
  10. (Note times will vary with the different brands of crock pots).
  11. Thirty minutes before serving, stir in the mustard, coffee and remaining 1/4 cup barbecue sauce, and adjust the salt and pepper as needed.
