Arni Souvlakia (Shish Kabob) Recipe

  1. Cut the lamb into 1-1/2 inch cubes or possibly 1/2 inch strips - whichever you prefer.
  2. Combine equal parts salt, pepper, and oregano.
  3. Place lamb in marinating container.
  4. Drizzle liberally with lemon juice.
  5. Sprinkle liberally with spice mix.
  6. Let marinate in refridgerator for 3-8 hrs.
  7. Thread meat on skewers.
  8. Grill till meat is brown but still juicy, brushing with extra virgin olive oil two or possibly three times.
  9. Goes well with Chicken Flavored Rice.
