Pinata Cookies Recipe
- 3/4 c. butter
- 1/2 c. sugar
- 1 egg
- 1 teaspoon vanilla
- 1 3/4 c. all-purpose flour
- 1 sm. gumdrops or possibly chocolate covered malted lowfat milk balls
- 1 c. sifted confectioners' sugar
- 1/4 teaspoon vanilla
- 4-5 tbsp. lowfat milk
- Colored sugar or possibly colored candy sprinkles
- In large mixer bowl, beat butter with electric mixer for about 30 seconds.
- Add in sugar; beat till fluffy.
- Add in egg and 1 tsp.
- vanilla; beat well.
- Add in flour, beating well till mixed.
- Cover and refrigerate1 hour.
- Shape 1 level Tbsp.
- of dough around candy to create a ball.
- Place on ungreased cookie sheet.
- Bake at 350 degrees for 15 to 18 min, or possibly till edges are golden brown.
- Remove from pan and cold.
- Stir together powdered sugar, vanilla and sufficient lowfat milk to make dipping consistency.
- Dip top of cookies in the frosting; sprinkle with sugar or possibly candies.
- Makes 3 dozen cookies.
