Greek Macaroni and Cheese, Makaronia Pastit
- 1 lb elbow macaroni, uncooked
- 2 cups spinach
- 2 cups evaporated milk
- 14 cup feta cheese
- 1 teaspoon nutmeg, fresh grated
- 3 tablespoons butter
- 2 garlic cloves, crushed
- 2 green onions, minced
- 2 tablespoons flour
- 1 cup gruyere, shredded
- 14 cup parmesan cheese, shredded
- 14 cup romano cheese, shredded
- Cook pasta just underdone; drain.
- Mix in spinach.
- In a blender add milk, feta cheese, and nutmeg; blend.
- In skillet add butter, garlic, and green onion; saute.
- Add flour; brown; add blender mixture; add cheeses; melt.
- Pour over noodles; toss.
- Put in a greased casserole.
- Bake, covered, in a 350 degree Fahrenheit oven for 1 hour.
- Uncover last 15 minutes; bake until done.
