Couscous and Feta Stuffed Red Peppers

  1. Bring liquid and 1 tbsp.
  2. Olive oil to boil in medium saucepan
  3. Add couscous and turn off heat.
  4. Allow to sit for five minutes then fluff with a fork.
  5. Set aside to cool
  6. Cut red peppers in half length wise and remove seeds and veins.
  7. Place in a baking dish and set aside
  8. Add diced onion, crumbled feta, and roasted corn to couscous.
  9. Toss gently
  10. Stuff peppers with couscous mixture
  11. Bake at 400F for 30 to 40 minutes depending on how soft you like your peppers
