Mini Chicken Patties with Spring Green Salad

  1. Heat oven to 400 degrees F.
  2. Mix chicken, stuffing mix, garlic and egg whites just until blended.
  3. Roll into 20 balls; flatten to 1/4-inch thickness.
  4. Place on baking sheet sprayed with cooking spray.
  5. Bake 20 min.
  6. or until done.
  7. Toss arugula with peas and onions; place on 4 plates.
  8. Top with chicken patties.
  9. Drizzle with dressing.
