Artichoke Cheddar Soup Recipe

  1. Saute/fry the onions, carrots and celery in the butter in a stockpot till tender.
  2. Stir in the flour and cornstarch.
  3. Add in the chicken broth and lowfat milk
  4. Cook over medium heat till the mix begins to boil and thicken, stirring frequently; reduce heat.
  5. Add in the cheese and pepper.
  6. Simmer till the cheese is melted, stirring frequently.
  7. Stir in the artichoke hearts and salt.
  8. Ladle the hot soup into soup bowls.
  9. Note:We have customers who will drop everything when they know I've made this for our soup of the day.
  10. It has a wonderful velvety texture.
