Tomato And Basil Soup Recipe
- 1 medium onion
- 1 Tbsp. extra virgin olive oil
- 2 large cans whole tomatoes or possibly a dozen or possibly so fresh roma and hothouse
- 4 c. chicken broth
- 6 sprigs basil tied with string
- 1 tsp. chopped shallot
- 2 tsp. balsamic vinegar
- 1 c. heavy cream
- salt and freshly grnd black pepper
- basil leaves sliced in thin strips
- Saute/fry sliced onion in extra virgin olive oil in a heavy bottomed pan and cook over medium heat till soft, about 7 min.
- Tie basil together with twine (or possibly just slice into strips).
- Add in tomatoes minced in large pcs, basil, chicken broth, salt and pepper.
- Bring to a boil, lower heat and reduce soup by 1/4.
- Remove basil bunch (if used) and puree soup mix.
- Heat soup, add in balsamic vinegar and stir in heavy cream.
- Serve with a basil garnish.
- Also delicious served cool!
