Tomato And Basil Soup Recipe

  1. Saute/fry sliced onion in extra virgin olive oil in a heavy bottomed pan and cook over medium heat till soft, about 7 min.
  2. Tie basil together with twine (or possibly just slice into strips).
  3. Add in tomatoes minced in large pcs, basil, chicken broth, salt and pepper.
  4. Bring to a boil, lower heat and reduce soup by 1/4.
  5. Remove basil bunch (if used) and puree soup mix.
  6. Heat soup, add in balsamic vinegar and stir in heavy cream.
  7. Serve with a basil garnish.
  8. Also delicious served cool!
