AMIEs Perfect LEMON Bar
- 170 grams baking flour
- 125 grams softened butter
- 110 grams sifted sugar
- 1 tbsp fresh milk
- 1 tsp vanilla extract
- 1/4 tsp salt
- 170 ml whipping cream
- 6 eggs
- 25 grams cornstarch
- 350 grams sifted sugar
- 180 ml fresh lemon juice
- 1 lemon rind of 2 lemons
- Preheat the oven to 170AsC.
- Oil and line a 28 x 18 cm.
- square tin with greaseproof baking paper.
- Sift together all the base ingredients in a "robot" or beat well using an electric mixer.
- Pour the mixture into the prepared tin, level the surface and bake for 20-25 minutes or until well risen and firm to touch.
- Leave to cool completely in the tin before turning out into a wire rack, removing the line paper.
- To make the topping, mix together 2 tablespoons whipping cream and cornstarch, and stir well.
- Fold in the remaining cream, and the remaining ingredients, beating until blended.
- Put the mixture into a pan and bring to the boil over a low-medium heat, stirring continously until thickens (6').
- Pour the cream and spread evenly into the base and bake for around 5-10 minutes.
- Leave to cool completely before cutting into squares.
- Arrange the squares into serving platter.
- Serve, share and enjoy.
- Note: Add the lemon juice a teaspoon a time.
