AMIEs Perfect LEMON Bar

  1. Preheat the oven to 170AsC.
  2. Oil and line a 28 x 18 cm.
  3. square tin with greaseproof baking paper.
  4. Sift together all the base ingredients in a "robot" or beat well using an electric mixer.
  5. Pour the mixture into the prepared tin, level the surface and bake for 20-25 minutes or until well risen and firm to touch.
  6. Leave to cool completely in the tin before turning out into a wire rack, removing the line paper.
  7. To make the topping, mix together 2 tablespoons whipping cream and cornstarch, and stir well.
  8. Fold in the remaining cream, and the remaining ingredients, beating until blended.
  9. Put the mixture into a pan and bring to the boil over a low-medium heat, stirring continously until thickens (6').
  10. Pour the cream and spread evenly into the base and bake for around 5-10 minutes.
  11. Leave to cool completely before cutting into squares.
  12. Arrange the squares into serving platter.
  13. Serve, share and enjoy.
  14. Note: Add the lemon juice a teaspoon a time.
