Crab Cakes
- 2 each eggs
- 1/2 cup Kraft Rancher's Choice Dressing
- 2 cups canned crabmeat, drained, flaked
- 2 cups Ritz Crackers, coarsely crushed
- 1 cup Kraft 3 Cheese Blend Shredded Cheese
- 1/2 cup green onions, chopped
- 1/2 tsp. cayenne pepper
- Beat eggs and dressing in medium bowl with wire whisk until well blended.
- Add crabmeat; mix lightly.
- Add cracker crumbs, cheese, onions and pepper; mix until well blended.
- Let stand 5 min.
- Shape into 48 patties (or 24 patties for trial recipe), using #60 scoop.
- Place in single layer in parchment paper-lined full sheet pans.
- Bake at 375F (215C ) for 5 to 7 min.
- or until cakes are heated through and golden brown.
- Serve warm.
