Crab Cakes

  1. Beat eggs and dressing in medium bowl with wire whisk until well blended.
  2. Add crabmeat; mix lightly.
  3. Add cracker crumbs, cheese, onions and pepper; mix until well blended.
  4. Let stand 5 min.
  5. Shape into 48 patties (or 24 patties for trial recipe), using #60 scoop.
  6. Place in single layer in parchment paper-lined full sheet pans.
  7. Bake at 375F (215C ) for 5 to 7 min.
  8. or until cakes are heated through and golden brown.
  9. Serve warm.
