Rice & Pea's from My House to Yours!
- 8 ounces pigeon peas, canned, drained
- 8 ounces black-eyed peas, canned, drained
- 2 cups water
- 1 (13 1/2 ounce) can coconut milk
- 1 teaspoon garlic salt
- 1 onion, sweet, large, diced
- 2 green onions, diced
- 1 tomatoes, large, diced (optional)
- 12 teaspoon sea salt
- 1 teaspoon black pepper
- 1 12 teaspoons thyme, fresh
- 1 teaspoon sweet paprika
- 14 habanero pepper, small, finely chopped (optional)
- 2 cups long-grain rice
- Combine the beans, water, coconut milk, garlic, sweet onion, tomatoe, salt, pepper, thyme, paprika and habanero in a covered medium-size pot, mix well and bring to a boil.
- Once a rapid boil is achieved add in the rice and green onion.
- Mix well and simmer on low heat until the rice is tender and all the liquid has evaporated, about 15-20 minutes.
- Fluff the rice with a fork and serve with meat and gravy.
