Whole Wheat Banana Nut Bread Recipe
- 1/4 c. plus 2 tbsp. butter, softened
- 3/4 c. firmly packed dark brown sugar
- 2 Large eggs
- 1 1/2 c. whole wheat flour
- 3/4 c. all-purpose flour
- 2 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 tbsp. buttermilk
- 2 c. mashed ripe banana
- 1 c. minced pecans
- Cream butter; gradually add in sugar, beating well.
- Add in Large eggs, one at a time, beating well after each addition.
- Combine flour, baking pwdr, soda, and salt; add in to creamed mix alternately with buttermilk, beginning and ending with flour mix.
- Stir in banana and pecans.
- Spoon batter into a greased and floured 9x5x3-inch loaf pan.
- Bake at 350 degrees for 1 hour and 10 min or possibly till a wooden pick inserted in center comes out clean.
- Cold in pan 5 min; remove to wire rack and cold completely.
- Yield: 1 loaf.
