Endive with Curried Chicken Salad
- 6 Tbsp. Kraft Creamy Cucumber Dressing
- 6 Tbsp. Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 1 Tbsp. curry powder
- 3 cups boneless skinless chicken breasts, cooked, cooled and finely diced
- 3/4 cup green onions, thinly sliced
- 3/4 cup red peppers, finely diced
- 3/4 cup raisins
- 72 each endive leaves
- 3/4 cup slivered almonds, toasted
- 3/4 cup cilantro
- Mix cucumber dressing, Miracle Whip and curry powder.
- Combine chicken, onions, peppers and raisins in large bowl.
- Add dressing mixture; toss to coat.
- Refrigerate several hours or until chilled.
- For each serving: Fill each of 3 endive leaves with about 1 Tbsp.
- chicken salad and 1 cilantro leaf; sprinkle evenly with 1-1/2 tsp.
