Fried Hardcrab & Gravy
- 12 Steamed Hardcrab
- 2 Vidalia Onions
- 2 tbsp Old Bay Seasoning
- 1 Salt & pepper
- 1 dash cayenne pepper
- 2 cup all-purpose flour
- 1/2 cup vegetable oil
- Remove shells and claws, fins as well as deadmen.
- Collect the mustard and set aside
- Keep body in tact, using a crab mallet bang down the two ridges on each crab.
- Careful do not smash the crab!
- Slice onions set aside
- Heat oil in deep skillet
- Season crabs with salt and pepper, old bay, cayenne pepper
- Flour fronts and backs of crabs
- Place crabs in the hot oil and brown on both sides.
- Remove from oil and place on paper towels to drain
- Using the same oil left in the skillet saute the onions until opaque
- Add to the onions the mustard from the crabs, mix together
- Add the flour and let it brown, make a rue by adding water creating a gravy.
- Season to taste
- Place all of the crabs in the gravy and let simmer for one hour.
