Fried Hardcrab & Gravy

  1. Remove shells and claws, fins as well as deadmen.
  2. Collect the mustard and set aside
  3. Keep body in tact, using a crab mallet bang down the two ridges on each crab.
  4. Careful do not smash the crab!
  5. Slice onions set aside
  6. Heat oil in deep skillet
  7. Season crabs with salt and pepper, old bay, cayenne pepper
  8. Flour fronts and backs of crabs
  9. Place crabs in the hot oil and brown on both sides.
  10. Remove from oil and place on paper towels to drain
  11. Using the same oil left in the skillet saute the onions until opaque
  12. Add to the onions the mustard from the crabs, mix together
  13. Add the flour and let it brown, make a rue by adding water creating a gravy.
  14. Season to taste
  15. Place all of the crabs in the gravy and let simmer for one hour.
