Grilled Tomatoes with Mint Vinaigrette
- 13 c. loosely packed mint leaves
- 2 tbsp. olive oil
- 1 tbsp. red-wine vinegar
- 1/2 tsp. minced garlic
- 1/4 tsp. ground cumin
- 1/4 tsp. salt
- 4 large ripe tomatoes
- Heat grill or broiler.
- Whisk vinaigrette ingredients in a small bowl until blended.
- Lightly spray tomatoes with nonstick cooking spray.
- Grill or broil 4 to 6 inches from heat source 5 to 6 minutes, turning tomatoes over once, until slightly charred.
- Arrange on serving platter.
- Drizzle with vinaigrette.
