Rye bread
- 16 grams dried yeast
- 18 grams salt
- 30 grams sugar
- 90 grams butter
- 300 grams water at 14C
- 400 grams Rye flour
- 350 grams bread flour
- pour all ingredients together Into mixer EXCEPT Salt,
- Work with slow speed for 4 Minutes / until it turn into a smooth dough.
- add in Salt let it continue to work for another 6 Minutes Until the temperature of the dough being rised between 25 to 29C
- wrap the dough With plastic flim.
- let it prove for 30 minutes in room temperature
- divide the dough into 3 equal pieces, shape it and let It sit for another 40 minutes.
- preheat Oven at 200C put in the bread let it cook for 30 minutes
