Mexican Holiday Cheese Ball
- 1 tomatillo Salsa (see recipe on my profile)
- 4 oz cream cheese, room temperature, whisked smooth
- 8 oz grated cheese (I use Cotija from the Mexican Store)
- 1 zest of 1 lime
- 2 to 3 teaspoons green jalapeno sauce (I use poblano)
- 1 salt to taste
- 1 pepper to taste
- 1/4 cup cilantro leaves
- 1/4 cup chopped toasted almonds
- 2 green onions, cleaned, cut into very thin rounds, rinsed and dried
- Make tomatillo salsa.
- Push through a strainer to remove all liquid, and measure 3/4 cup of the strained salsa.
- In a bowl, mix the 3/4 cup salsa, cream cheese, grated cheese, lime zest, green onions, and jalapeno sauce.
- Season to taste with salt and pepper.
- Place in refrigerator to chill for 20 minutes.
- In a separate bowl, mix cilantro and almonds together.
- Remove cheers from refrigerator and form it into a large ball.
- Coat the ball evenly with the cilantro/almond mix.
- Wrap in plastic wrap and chill until serving.
- Serve with your favorite crackers, crudites, etc.
- *This recipe makes 1 (6 inch) ball.
