Mexican Holiday Cheese Ball

  1. Make tomatillo salsa.
  2. Push through a strainer to remove all liquid, and measure 3/4 cup of the strained salsa.
  3. In a bowl, mix the 3/4 cup salsa, cream cheese, grated cheese, lime zest, green onions, and jalapeno sauce.
  4. Season to taste with salt and pepper.
  5. Place in refrigerator to chill for 20 minutes.
  6. In a separate bowl, mix cilantro and almonds together.
  7. Remove cheers from refrigerator and form it into a large ball.
  8. Coat the ball evenly with the cilantro/almond mix.
  9. Wrap in plastic wrap and chill until serving.
  10. Serve with your favorite crackers, crudites, etc.
