Mediterranean Pizzas
- 4 small wholemeal pita breads
- 1/4 cup salt reduced tomato paste
- 1/2 red onion, sliced
- 2 small zucchini, sliced into ribbons using a vegetable peeler
- 1 red capsicum, roasted, peeled and deseeded
- 400g can artichoke hearts, drained, quartered
- 1/2 cup pitted Kalamata olives
- 80g block PHILADELPHIA Cream Cheese, crumbled
- 1/2 cup basil leaves, roughly torn
- rocket salad, to serve
- Spread pita breads evenly with tomato paste.
- Top with onion, zucchini, capsicum, artichoke, olives and Philly*.
- Bake at 200 degrees C for 10-15 mins until base is crisp and toppings are heated through.
- Remove pizza from oven, sprinkle with basil leaves and serve with a rocket salad.
