Valentine Berry Flan

  1. CRUST: Preheat oven to 425F.
  2. Combine flour and icing sugar.
  3. Cream butter and gradually blend in flour mixture.
  4. Work with hands to form a smooth dough.
  5. Press evenly on bottom and sides of a 9-inch fluted pan with removeable bottom.
  6. Prick with a fork and chill 15 minutes.
  7. Bake for 7-10 minutes or until light golden.
  8. Cool thoroughly in pan on rack.
  9. FILLING:.
  10. Beat cream cheese, icing sugar and vanillla together until smooth.
  11. Whip cream until stiff peaks form and fold into cheese mixture.
  12. Spread evenly in a baked crust and cover attractively with fruit, making a heart shape.
  13. GLAZE:
  14. In a small saucepan on medium, heat jam and lemon juice to boiling.
  15. Remove from heat.
  16. Cool slightly.
  17. Pour evenly over flan.
  18. Let cool completely.
  19. NOTE: Freezing is not recommended.
  20. Serve flan immediately at room temperature for a maximum flavor.

  22. Try different fruits to match the season - fresh or canned; grapes, apricots, blueberries, mandarins, kiwi, pineapple, blackberries, etc.
