Vegetable Polenta Pot Pie
- 13 cup margarine
- 13 cup flour
- 1 small onion, chopped
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 teaspoon taco seasoning (try Homemade Taco Seasoning Mix)
- 1 34 cups vegetable broth
- 23 cup soymilk
- 1 (16 ounce) package frozen mixed vegetables
- 1 (14 ounce) can black beans, drained and rinsed
- 1 12 cups cooked rice
- 1 (18 ounce) package prepared polenta
- Preheat oven to 350F.
- Melt margarine over medium heat.
- Stir in flour, onion, salt, pepper and taco seasoning.
- Cook, stirring constantly, until mixture is bubbly.
- Remove from heat.
- Stir in broth and soy milk.
- Heat to boiling, stirring constantly, then boil and stir for 1 minute.
- Stir in mixed vegetables, beans and rice; remove from heat.
- Pour mixture into 2-quart casserole pan.
- Cut polenta into 1/2-inch discs and arrange on top of vegetable mixture.
- Cook 35-40 minutes until bubbly.
