Spinbeefchee
- 2 (10 oz.) pkg. frozen spinach, thaw and drain
- 6 slices bacon, fried and crumbled
- 1 lb. lean ground beef
- 1 onion, chopped fine
- 1 tsp. garlic salt
- 1/2 tsp. salt
- 1/4 lb. fresh mushrooms, sliced
- 1 (8 oz.) can tomato sauce
- 1 c. sour cream
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 8 oz. cottage cheese
- 4 beaten eggs
- 2/3 c. Parmesan cheese
- 1 1/2 c. grated Cheddar cheese
- Squeeze liquid out of spinach.
- Brown beef and onion in large skillet.
- Add garlic salt, pepper and salt.
- Stir in mushrooms. Cook over low heat 5 minutes; drain off all liquid.
- In large bowl, combine tomato sauce, sour cream, basil, oregano, cottage cheese and eggs.
- Stir in bacon, spinach and meat mixture.
- Add 1/2 cup Parmesan and 2/3 cup of Cheddar cheese; mix well.
- Spoon into a lightly greased 9 x 13-inch baking dish.
- Sprinkle remaining cheeses.
- Cover and refrigerate overnight.
- Bake uncovered at 350u0b0 for 30 minutes.
