Potato Cakes
- 3 slice Sandwich bread
- 1 Butter for spreading
- 1 cup Cold mash potato
- 1 cup Cheddar cheese, grated
- 1 Egg
- 1 tbsp Grated onion
- 2 Rasher bacon, chopped
- 1 Seasoning- garlic powder, sea salt & oregano.
- 1 A little smoked paprika for colour
- Pre-heat oven to 190*C.
- Lightly butter each slice of bread .
- Cut into quarters and place buttered side down into a muffin tray.
- Mix mash potato with egg, cheese, onion, bacon and seasoning.
- Spoon the mixture into tray (on top of bread), sprinkle with paprika and bake for 20/30 minutes until golden brown.
- Get the kids to help you make them- they are a winner!
