Usal (A Mung-Bean Curry)

  1. Heat oil.
  2. Add cumin seeds, green chile.
  3. After seeds pop, add onions, ginger, garlic.
  4. Saute until onions are pink.
  5. Add tomato - saute some more.
  6. Add the spice powders.
  7. Fry briefly.
  8. Add mung beans.
  9. and maybe a cup of water.
  10. Salt to taste.
  11. Let simmer gently for 10 to 15 minutes.
  12. Garnish.
  13. Serve with rice/flat breads.
  14. Freezes well.
