Artichoke Cheese Puff Recipe
- 12 ounce Marinated artichoke hearts, sliced thickly or possibly quartered
- 1 med Onion, minced coarsely
- 3 x Pickled jalapenos, sliced into rings
- 5 x Large eggs
- 3/4 tsp Salt Fresh-grnd black pepper to taste
- 2 Tbsp. Flour
- 6 ounce Cheddar, grated
- 1 ounce Parmesan, grated
- Drain 1/4 c oil from the artichoke hearts and heat it in a skillet.
- Saute/fry onions till they are beginning to color.
- Combine Large eggs with salt, pepper, and flour and beat till smooth.
- Add in cheeses.
- Spray or possibly grease an 8x8 baking dish.
- Put artichokes, onions, and jalapenos in the baking dish, and pour egg-cheese mix over.
- Bake at 350 for 25 min, or possibly till completely set, golden, and slightly crusty on top.
- Serves 8-10 as an appetizer, or possibly 4-6 otherwise.
