Cajun spiced potato wedges recipe

  1. Preheat the oven to 200C (400F/Gas 6).
  2. Cut the potatoes into thick wedges.
  3. Cook in a large pan of salted boiling water for 3 minutes, drain well, and place in a large roasting tin with the lemon, garlic, onions, and bay leaves.
  4. Whisk together the remaining ingredients with 6 tbsp water and pour evenly over the potatoes.
  5. Toss well to coat.
  6. Roast for 30-40 minutes, or until the potatoes are tender and the liquid has been absorbed.
  7. Gently and frequently turn the potatoes during cooking, using a fish slice.
  8. Serve hot.
