Mum's Mexican Wedding Cookies

  1. Preheat oven to 400F.
  2. Chop nuts until fine and set aside.
  3. Mix powdered sugar, butter and vanilla extract together.
  4. Add the flour and nuts until fully combined.
  5. Dough will be crumbley.
  6. Shape dough into one inch balls.
  7. The dough should stick together as you form the ball.
  8. If not, add a bit more butter.
  9. Place on cookie sheet lined with parchment paper about one inch apart.
  10. Bake for 10 minutes.
  11. Allow to cool slightly on cookie rack.
  12. Roll warm cookies in powdered sugar.
  13. Allow to cool more and roll them again in powdered sugar.
