Bacon, Mushroom and Swiss Croissant
- 1 tablespoon butter
- 6 large eggs, lightly beaten
- 8 ounces sliced mushrooms
- 6 croissants, split (5-inch croissants)
- 4 ounces baby swiss cheese, cut into thin slices
- 6 slices bacon, cooked
- 2 tablespoons chopped fresh chives
- Preheat broiler with rack set 3-5 inches from heat.
- In a large nonstick skillet, melt butter over medium heat.
- Saute eggs and mushrooms for 3 minutes or until eggs are scrambled.
- Place croissants on a work surface.
- Top each croissant half equally with egg mixture, Swiss cheese, and bacon.
- Place open-faced croissant halves on a broiler pan and broil for 2 minutes or until croissant is slightly toasted and cheese is melted.
- Garnish with chives.
