Creamed Cabbage Soup Lightened Up!

  1. In a large saucepan, combine broth and vegetables.
  2. Cover and simmer until vegetables are tender, about 20 minutes.
  3. In a small saucepan, melt butter; stir in flour.
  4. Gradually whisk in milk; cook and stir until thickened.
  5. Stir into vegetable mixture.
  6. Add vegetarian bacon, pepper, and thyme; heat through.
  7. If you wish, add the cream cheese now, stirring to mix thoroughly.
  8. Salt and pepper to taste.
  9. Sprinkle a little smoked paprika over the top to garnish.
  10. Enjoy!
