Filbert Fancies
- 1 cup shelled unblanched filberts
- 1 beaten egg
- 2 cups sifted powdered sugar
- 3 tablespoons butter, softened
- 1 teaspoon vanilla
- 1 dash salt
- 2 (1 ounce) unsweetened chocolate squares, melted and cooled
- 6 ounces mini marshmallows
- 1 cup shredded coconut
- Coarsely chop filberts; spread on baking sheet and toast at 350 until golden brown, about 10 minutes.
- Cool.
- Combine egg, sugar, butter, vanilla and salt.
- Beat until very light and fluffy.
- Blend in chocolate.
- Combine marshmallows and filberts; fold in chocolate mixture.
- Drop from teaspoon into bowl of coconut; roll evenly to coat.
- Place on waxed paper.
- Let stand until set.
