Applesauce Cake Squares
- 1 1/2 (1 oz.) sq. unsweetened chocolate
- 1/2 c. butter or margarine
- 1 c. firmly packed brown sugar
- 1/2 c. unsweetened applesauce
- 2 eggs, beaten
- 1 tsp. vanilla extract
- 1 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- Nutty Coconut Frosting
- Place unsweetened chocolate and butter in a heavy saucepan over low heat; stir until chocolate melts.
- Set aside.
- Combine sugar, applesauce, eggs and vanilla in a large bowl; mix well. Combine flour, baking powder, soda and salt; add to applesauce mixture, stirring well.
- Stir in chocolate mixture.
- Spoon the batter into a greased 9-inch square baking pan.
- Bake at 350u0b0 for 30 minutes.
- Cool completely.
- Top with Nutty Coconut Frosting; cut into squares.
- Yields 1 1/2 dozen.
