Bean Stew Recipe
- 1/2 c. extra virgin olive oil
- 2 x onions, minced
- 4 x garlic cloves
- 2 lb runner beans, trimmed & sliced
- 1 lb tomatoes, minced
- 1 Tbsp. sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp basil
- 2 c. stock
- Heat oil in a pot & fry the onion for 2 min.
- add in garlic & fry together.
- Add in the rest of the ingredients & the seasonings.
- Mix together well.
- Fry for 5 min.
- Add in stock.
- Simmer until the beans are tender.
- Serve warm or possibly cool.
