Low-Fat Philly-Style Cheesecake

  1. Preheat oven to 325 degrees F.
  2. Mix graham cracker crumbs, 3 tbsp sugar and melted butter thoroughtly.
  3. Press mixture into the bottom of a 9 inch springform pan to form crust.
  4. Bake crust for 10 minutes.
  5. Mix cream cheese, sugar and vanilla thoroughly.
  6. Do not overmix, this contributes to cracking.
  7. Add egg slowly, mixing just enough to blend.
  8. Bake for 40 minutes or until center is almost set.
  9. Cool.
  10. Chill in refrigerator for at least 4 hours or overnight.
