Charleston Red Rice
- 2 c. raw, long grain rice
- 6 c. boiling water
- 3 tsp. salt
- 6 slices lean bacon
- 2 medium onions, chopped fine
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 3 tsp. sugar
- 2 tsp. Worcestershire sauce
- dash of red hot pepper sauce
- Cook rice in 6 cups salted water until light and fluffy, not soft and sticky.
- Fry bacon until brown and crisp.
- Saute onions in 4 tablespoons of bacon fat until clear.
- Add tomato sauce and paste, sugar, Worcestershire sauce and hot sauce and cook slowly for 10 minutes.
- Place the cooked rice in a buttered baking dish and stir all seasonings in rice.
- Place in oven and bake at 325u0b0 for 45 minutes.
- Crumble bacon over top.
- Makes 10 to 12 servings.
