Charleston Red Rice

  1. Cook rice in 6 cups salted water until light and fluffy, not soft and sticky.
  2. Fry bacon until brown and crisp.
  3. Saute onions in 4 tablespoons of bacon fat until clear.
  4. Add tomato sauce and paste, sugar, Worcestershire sauce and hot sauce and cook slowly for 10 minutes.
  5. Place the cooked rice in a buttered baking dish and stir all seasonings in rice.
  6. Place in oven and bake at 325u0b0 for 45 minutes.
  7. Crumble bacon over top.
  8. Makes 10 to 12 servings.
