Spicy Texas Ranch Filled Biscuits

  1. Preheat oven to 350 degrees.
  2. Lightly grease 8 jumbo muffin tins with nonstick cooking spray.
  3. Set aside.
  4. Pop open the can of biscuits.
  5. Press each biscuit dough round into the bottom and up the sides (about halfway) of the greased pan.
  6. In a large bowl, mix butter and hot sauce together.
  7. Stir in chicken to coat.
  8. Set aside.
  9. To assemble: spread 1/2 tablespoon ranch dressing onto the bottom of each biscuit bowl.
  10. Sprinkle 1/2 tablespoon of blue cheese crumbles on the dressing and top with about 1/4 cup of prepared chicken.
  11. Top chicken with another 1/2 tablespoon of ranch dressing, 1/2 tablespoon blue cheese crumbles and 1 tablespoon each of mozzarella and cheddar cheeses.
  12. Bake for 15-20 minutes or until edges have browned and dough is thoroughly cooked.
  13. Cool 5 minutes before removing from pans.
  14. Top with chopped cilantro and serve warm with more ranch dressing.
