Sourdough Bread (French)
- 1 cup warm water (105 to 115 degrees)
- 1 cup sourdough starter
- 2 cups flour
- 2 teaspoons sugar
- 1 12 teaspoons salt
- 12 teaspoon baking soda
- Mix water, the sourdough start and flour in a non-metallic bowl.
- Cover loosely.
- Let stand in warm place until mixture bubbles and has a definite sour aroma (about 24 hours).
- Mix sugar, salt and baking soda into sourdough mixture.
- Stir in enough of the remaining flour to make dough easy to handle.
- Knead dough on well-floured surface.
- Form and let rise until double in size, covered.
