Crock Pot Pasta Sauce
- 1 onion
- 1 green pepper
- 15 fresh basil leaves (dry may be used)
- 15 fresh parsley leaves (dry parsley may be used)
- 9 garlic cloves
- 1 teaspoon black pepper
- 1 teaspoon celery salt
- 2 tablespoons italian seasoning
- 1 (12 ounce) can tomato paste
- 16 cups tomatoes (enough tomatoes to fill your crockpot)
- Dice onion, green peppers, and garlic (we use a garlic press).
- Combine all ingredients except tomato paste and tomatoes in crock pot.
- Blanch tomatoes and chill in ice water and remove skins.
- Then dice tomatoes and place in strainer.
- (Do this over the sink or bowl so you can drain out some of the seeds and excess water/juice).
- Place drained tomatoes into crock pot until your crock pot is full.
- Turn crock pot on high and cover.
- Stir sauce whenever you remember or want to smell the yummy goodness.
- Remove the lid for about 30 mins a few times throughout cooking to release steam.
- Cook for about 1 day then add can of paste stir and can in pressure canner.
