Apricot Glazed Pork Tenderloin

  1. Heat broiler.
  2. Set rack 4 inches from heat.
  3. Line a rimmed baking sheet with foil.
  4. Rub pork with oil; season with salt and pepper.
  5. Broil 10 minutes.
  6. In a small saucepan, whisk together jam and mustard.
  7. Cook over medium heat until jam melts (3-4 minutes).
  8. Remove from heat.
  9. Transfer 1/2 sauce to a small bowl for brushing.
  10. Cover saucepan to keep remaining sauce warm.
  11. Remove pork from broiler; brush with reserved sauce.
  12. Continue broiling until pork is blackened in spots and registers 150 degrees on an instant read thermomenter.

  15. Cover pork loosely with foil and let rest 5 minutes.
  16. Slice into medallions and drizzle with warm sauce.
