Herbed Vegetable Blend Rice Recipe
- 3/4 c. UNCLE BEN'S® converted rice
- 1/4 c. long grain wild rice
- 2 c. water
- 1 sm. onion, diced med.
- 1 med. green tomato, skinned & diced
- 1/2 green pepper, dice (any color is fine)
- 1/2 clove fresh garlic
- 2 sprigs parsley, minced
- Salt and pepper
- Chicken bouillon (as per 1 c. water)
- Shredded fresh carrots, zucchini, etc. (optional)
- In saucepan, heat butter, then saute/fry onion, green pepper and garlic till tender.
- Then add in rice and stir.
- Then add in spices, tomato and liquid with bouillon cubes.
- Cover and bring to boil.
- At rapid boil, cut back to very low simmer till 3/4 liquid is absorbed.
- When absorbed remove from heat and let stand covered 15 to 20 min.
- Fluff with fork and serve.
- (This should be fluffy and not sticky.)
