Caribbean Chicken Salad Croissants

  1. Combine all ingredients except croissants and lettuce in large bowl.
  2. For each serving: Place lettuce leaf on bottom half of croissant; cover with #6 scoop ( 3/4 cup 175 mL) of the chicken mixture and top of croissant.
