Caribbean Chicken Salad Croissants
- 60 each boneless skinless chicken breasts, seasoned, grilled and chopped
- 3-3/4 qt. large mangos, peeled, chopped
- 3 cups red or green peppers, finely chopped
- 3 cups Kraft Mayo Real Mayonnaise
- 2 cups red onions, finely chopped
- 1-1/2 cups celery, finely chopped
- 1-1/2 cups Dijon mustard
- 1-1/2 cups apricot preserves
- 12 each limes, juiced Safeway 3 ct For $1.00 thru 02/09
- 1/3 cup Caribbean jerk seasoning
- 3 Tbsp. salt
- 2 Tbsp. honey
- 4-1/2 tsp. ground black pepper
- 48 each leaf lettuce leaves
- 48 each croissants, split, toasted
- Combine all ingredients except croissants and lettuce in large bowl.
- For each serving: Place lettuce leaf on bottom half of croissant; cover with #6 scoop ( 3/4 cup 175 mL) of the chicken mixture and top of croissant.
