Fluffy Tofu and Kinako Roasted Soy Flour Cake
- 100 grams Silken tofu
- 80 grams Cake flour
- 20 grams Kinako
- 1 tsp Baking powder
- 60 grams Sugar
- 1 Egg
- 20 grams Melted butter
- Sift the ingredients together.
- Mash the tofu into a paste with a whisk.
- Preheat the oven to 170C.
- Crack the eggs into a bowl.
- Add the sugar in 2 batches and mix well after each addition.
- Add the tofu and mix.
- Add the melted butter and mix.
- Add the ingredients and mix with a rubber spatula until the flouriness is gone.
- Pour the batter into a baking pan and smooth out the surface.
- Drop the pan from a height of 10 cm.
- Bake in the oven for 40 minutes.
- Check with a skewer and if it comes out clean, it's done.
- Remove from the pan and let it cool on a rack.
