Fluffy Tofu and Kinako Roasted Soy Flour Cake

  1. Sift the ingredients together.
  2. Mash the tofu into a paste with a whisk.
  3. Preheat the oven to 170C.
  4. Crack the eggs into a bowl.
  5. Add the sugar in 2 batches and mix well after each addition.
  6. Add the tofu and mix.
  7. Add the melted butter and mix.
  8. Add the ingredients and mix with a rubber spatula until the flouriness is gone.
  9. Pour the batter into a baking pan and smooth out the surface.
  10. Drop the pan from a height of 10 cm.
  11. Bake in the oven for 40 minutes.
  12. Check with a skewer and if it comes out clean, it's done.
  13. Remove from the pan and let it cool on a rack.
