Jerk Chicken Stir Fry
- 6 oz Chicken breast, cubed
- 1 large Carrot
- 1 each Green and red bell pepper
- 1 stick Celery
- 1 tsp Jerk seasoning (or to personal taste)
- 2 tbsp Olive oil
- 1 Salt and pepper
- Combine chicken with jerk seasoning and salt to taste.
- Cover and let marinate for 15 minutes.
- Wash and slice vegetables.
- Any combination of vegetables work well.
- You just have to know how fast each cooks.
- Heat oil in a nonstick skillet on medium heat.
- Add chicken and cook until center is no longer pink.
- Add carrots and celery to the pan and cook for another 2 minutes.
- Then add the peppers and let cook for another 2 mins.
- Season with more salt if needed and pepper to taste.
- Turn off heat and enjoy!
- Please note that cook times may vary for different vegetables.
- The result you want to get should be crisp tender vegetables and moist juicy chicken.
