Open Face Lobster Salad Sandwiches

  1. Combine first 4 ingredients and 2 tablespoons chives in medium bowl.
  2. Cook lobster in medium pot of boiling salted water until just opaque in center, about 8 minutes.
  3. Drain; cool.
  4. Remove meat from shell.
  5. Dice lobster; fold into mayonnaise mixture.
  6. Season with salt and pepper.
  7. Spoon salad atop bread slices.
  8. Sprinkle with 1 tablespoon chives and serve.
