Corn Soup

  1. Remove corn from cobs.
  2. Add to boiling water; cook 5 min.
  3. or until tender.
  4. Drain.
  5. Meanwhile, heat dressing in large saucepan on medium-high heat.
  6. Add onions; cook and stir 5 min.
  7. or until onions are tender.
  8. Add corn, broth and cardamom; mix well.
  9. Cook 10 min.
  10. Remove half of the corn mixture; place in blender container.
  11. Add sour cream; cover.
  12. Blend until smooth.
  13. Return to saucepan.
  14. Reduce heat to medium-low; cook 5 min., stirring constantly.
  15. Pour soup evenly into six soup bowls.
  16. Top each serving with about 1 Tbsp.
  17. of the vegetables.
