Strawberry Walnut Bread
- 3 cup Rice flour
- 1/2 tsp xanthum gum
- 2 cup sugar substitute, such as splenda
- 1 tbsp ground cinnamon
- 1 1/2 tsp baking soda
- 1 tsp salt
- 4 eggs (or equivalent in egg substitute)
- 1 1/4 cup vegetable oil
- 10 oz frozen, sliced strawberries, thawed (do not drain)
- 1 1/4 cup chopped walnuts
- Preheat oven to 350F.
- Grease 1 loaf pan.
- Combine flour, xanthum gum, sugar, cinnamon, baking soda, & salt.
- Whisk eggs in small bowl, then add eggs & oil to mixture.
- Stir just until blended.
- Fold in undrained strawberries & walnuts.
- Spoon into pan.
- Bake for 70 minutes.
- Let cool.
