Beets with Apples in Special Sauce

  1. In a large skillet over medium heat, combine 1/4 cup of the beet liquid, vinegar, lemon juice, salt, brown sugar and cornstarch; mix well.
  2. Cook, stirring constantly, until thickened and clear.
  3. Stir in beets and apple.
  4. Reduce heat to low and gently simmer for 15 minutes.
  5. Serve warm.
  6. Freeze leftovers.
