Spiced White Cabbage

  1. Boil cabbage ribbons 20 minutes in lightly salted water.
  2. Drain and cool.
  3. In a 14-inch saute pan, heat olive oil until smoking.
  4. Add cumin, horseradish, pepper and speck and toss to coat.
  5. Add cabbage and toss again.
  6. Cook 8 to 10 minutes until soft and well-seasoned.
  7. Sprinkle with lemon juice and serve with sliced goose breast.
